Anyone else have Easter ham/sweet potatoes/muffins/etc. filling up their entire fridge and basically coming out of their ears?

Too Many Leftovers Meme - Real Food with Dana

Umm, yeah…that would be me. Not like I’m complaining at all. You guys know how much I love leftovers. Um, hello – that means you don’t have to actually prep/cook anything for DAYS this week.

But let’s be real – who wants to eat the exact same meal over, and over, and over again until all the leftovers are gone? Not me. Even if you have an Easter brunch as epically delicious as ours was.

Here’s what we had on our Easter Brunch menu…

Honey-Baked Ham
Homemade Apple Butter
Hickory Honey Mustard
Zingy Ginger Cranberry Sauce 
Egg Frittata with Zucchini, Caramelized Onions, Swiss Chard, Goat Cheese and Chives
Sweet Potato Gratin from Nourish: The Paleo Healing Cookbook from Meatified
Paleo Honey “Cornbread” Muffins from Brittany Angell’s Every Last Crumb: Paleo Bread and Beyond
Blueberry Crumb Cake (full of gluten and butter. I’ll have to adapt this so I can actually eat it one day.)
Mixed berry fruit salad

Our guests also brought a cinnamon babka and croissants. Did I mention we also had a mimosa bar? And by that I mean I put out three different kinds of juice so we could choose which one we each wanted with the champagne. Yeah, we’re fancy over here. Kind of.

So even with 11 people, we still have leftovers of all that really freaking delicious food. So with these recipes, I’m looking for a new, easy, tasty spin on my leftovers to make them a little more interesting than just throwing them on a plate in the microwave.

the easiest option: dice up ham and sweet potatoes and throw them in scrambled eggs. Or poach some eggs and throw them on top. Add some avocado if you like. Done. This will be my breakfast approximately every day this week.

Ham & Mushroom Omelet 

Ham, Broccoli and Sweet Potato Frittata 

Add some ham on these Breakfast Biscuit Sandwiches.

Ham, Apple & Sweet Potato Scramble 

Ham & Egg Mini Muffins 

Spaghetti Squash Carbonara – sub in some chopped ham for the bacon!

Paleo Creole Ham and Cauliflower Rice 

Sweet Potato Soup with Ham 

Paleo Ham & Sweet Potato Stew

Plantain Bread Cuban Sandwich

Paleo Creole Ham and Cauliflower Rice 

Throw diced ham into some Asian Cauliflower Rice!

Brussels Sprouts with Ham and Caramelized Onions 

Collard Greens and Sweet Potato Hash 

Sweet Potato Smoothie 

Sweet Potato Pancakes 

Sweet Potato Bread 

I kind of want to try making waffles out of my leftover sweet potato gratin. I’ve been waffling everything lately. Not sure how it will turn out…I’ll report back. Fingers crossed!

  1. Awesome ideas, Dana!! I’ve got the exact some problem and your clever ideas are just the inspiration I need to clear a shelf or two of leftovers! I also have a big family,however, I think our eyes are usually bigger than our bellies on occasions like this. Thanks so much for sharing!

    1. Thanks Siobhan! I made the asian cauliflower rice last night with my leftovers and it turned out amazing. You don’t even realize you’re eating the Easter ham because it’s in such a different form! I think my families eyes are always bigger than our stomachs when it comes to making food and we’re having people over too 🙂
