Easy Baked Chicken Thighs

Serves: 4 servings
Ingredients
  • 1 lb boneless chicken thighs
  • 1-2 tsp cooking fat: olive oil, coconut oil, or ghee
  • ½ tsp garlic
  • ½ tsp onion powder
  • 2 tsp poultry seasoning
  • ½ tsp salt
  • ½ tsp fresh ground black pepper**
  • 1 lemon, sliced into thin rings
Directions
  1. Preheat oven to 400.
  2. Grease the bottom of a glass baking dish with cooking fat. Season the chicken on both sides with garlic and onion powder, poultry seasoning, salt, and pepper.
  3. Place the chicken in the dish, skin side up (if you have skin-on) with one slice of lemon on each piece.
  4. Pop the dish in the oven and bake for 30 minutes, then set the oven to broil and cook an additional 3-5 minutes until slightly browned.
