Easy Oven Roasted Cauliflower Rice

Ingredients
  • 1 medium head cauliflower
  • 1 tsp sea salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • optional: additional herbs & seasonings
Directions
  1. Preheat oven to 425
  2. Cut the core out of the cauliflower, then chop it into florets.
  3. To rice the cauliflower, put it through the food processor with the shredding attachment. You could also use a box grater to do this or run a knife through chopped florets about...100 times.
  4. Toss the cauliflower rice in a large bowl with 1 Tbsp ghee or coconut oil plus the salt, garlic and onion powder. (Now would be the time to add in any other seasonings!) Spread the mixture evenly on the prepared baking sheet. Try to smooth out any big clumps.
  5. Pop the sheet in the oven, and roast for 20-25 minutes, until the rice becomes lightly browned. Check it at about 20 minutes to make sure it doesn’t burn, then keep a close watch until 25 minutes.
  6. Top with all of your favorite veggies and proteins!
Notes
you can easily use this cauliflower rice to make any of my other cauliflower rice dishes (like Cauliflower Rice Biryani or AIP Curry Cauliflower Rice) - just sauté the finished product with the additional seasonings or add-ins for a few minutes in a large sauté pan, and done!
