20­-Minute Tomato Basil Soup

Ingredients
  • 1 Tbsp. olive oil + more for drizzling
  • 1 medium onion, chopped
  • 4 cloves garlic, peeled and chopped
  • 4-6 basil leaves, torn or chopped + more for garnish (may substitute 1-2 tsp. dried basil)
  • 2 28-ounce can or jar of no-salt added diced tomatoes
  • 4 tsp. balsamic vinegar
  • Sea salt and pepper to taste
Directions
  1. Place a medium saucepan over medium heat. Add oil. When oil is hot, add onion and cook 4 minutes until slightly soft, stirring occasionally.
  2. Add garlic and cook an additional 30 seconds or until fragrant. If using dried basil, stir it in now.
  3. Add tomatoes and their juice and bring to a boil.
  4. Cover, reduce heat and simmer for 10 minutes.
  5. Transfer to a blender container, add the balsamic vinegar and basil leaves, and blend until desired consistency.
  6. Taste and season with salt and pepper. Sprinkle with chopped basil and drizzle with additional olive oil, if desired.
