Buffalo Ranch Sweet Potato Fries

Ingredients
For the sweet potato fries
  • 2 large sweet potatoes, chopped into fry-like shapes (mine were like steak fries)
  • 2 Tbsp coconut oil or ghee, melted
  • 2 tsp minced garlic
  • ¾ tsp sea salt
  • ¼ tsp black pepper
For serving
  • paleo ranch dressing
  • buffalo sauce (or hot sauce)
  • Chopped cilantro for serving
Directions
  1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Toss the chopped sweet potatoes in a large bowl with the melted coconut oil (or ghee), garlic, sea salt, and pepper.
  3. Lay them in an even layer on the baking sheet, leaving a little space between each fry, and bake for 30 minutes.
  4. If you haven’t made your paleo ranch dressing yet, now would be a great time to do that!
  5. Turn the oven to broil (mine was at broil-450 F) for 5 minutes so they get a little crispy. Watch closely to make sure they don’t burn!
  6. Garnish with (or dip in!) ranch, buffalo sauce, and toss some chopped cilantro or parsley on top.
