optional: ¼ c chopped sun-dried tomatoes, olives, or 2 Tbsp capers
Directions
Blend all the ingredients in a food processor until a smooth consistency is reached. Adjust salt and pepper, to taste. If desired, stir in the sun-dried tomatoes, olives, or capers.
Dig in!
Notes
Use as a thick dressing on salads, as dipping sauce for roasted carrots, parsnips, or sweet potatoes, or dollop a bunch on some roast chicken or fish! Also great stirred into some cauliflower or parsnip rice.
