1 serving breakfast sausage (homemade or use a compliant brand like Pederson's!)
½ cup leftover roasted cauliflower
½ cup sautéed peppers and onions
1 handful arugula or lettuce greens
optional: ½ avocado, sliced
For serving: hot sauce + fermented veggies (kraut) + scallions
Directions
Heat a small skillet with 1 tsp avocado oil or ghee for 2 minutes, then add the egg. Fry it until the white is cooked through but the yolk is still slightly runny, about 3-4 minutes.
Throw everything else besides the avocado in a skillet or the microwave to warm together.
Top with sliced avocado, hot sauce, and your favorite fermented veggies or kraut!
