A delicious, simple fall snack or dessert only sweetened with apple butter!
Serves: 2
Ingredients
1 cup coconut milk (I used ½ light and half regular)
½ cup canned pumpkin
2 Tbsp homemade apple butter
1 ½ tsp pumpkin pie spice
½ tsp maple extract
¼ tsp vanilla extract
¼ cup chia seeds
Directions
Combine all ingredients in a medium bowl (I like cute little mason jars) until well mixed. Refrigerate at least an hour before serving.
If the pudding is too thick for you, add a little extra liquid. And if it's too liquidy, stir in some extra chia seeds - starting with 1 tsp. Refrigerate an additional 20 minutes to let it firm up a bit before serving.
Top with whipped coconut cream, macadamia nuts, or roasted coconut chips!
Notes
*You can sub almond for coconut milk, and use any combination of light/regular coconut milk.
