Pineapple BLT Burgers with Spicy Mayo

Ingredients
For the burgers
  • 1 lb ground turkey (I used dark meat)
  • 1 Tbsp coarse ground mustard
  • 1 tsp sea salt
  • 1 tsp minced garlic
  • ½ tsp minced ginger
  • ½ tsp black pepper
  • 1 medium pineapple, peeled and cut into ½ inch thick rings
  • 1 medium tomato, sliced thick
  • 1 avocado, sliced
  • ½ red onion, sliced thick
  • 4 strips of bacon
For the spicy mayo:
  • ¼ cup mayo
  • 2-3 Tbsp sriracha
  • Small pinch of garlic powder
  • 1 tsp lemon juice
Directions
  1. If you’re using a grill, now would be a great time to preheat it!
  2. Prepare the burgers - combine the ground turkey, mustard, sea salt, garlic, ginger, and pepper in a bowl with your hands and form into four even-sized patties. Set aside and wash your hands.
  3. Make the spicy mayo: combine the mayo, sriracha, garlic powder, and lemon juice in a small bowl. Set aside.
  4. Heat a up your grill or large cast iron skillet over medium heat with 1 Tbsp avocado oil. When hot, add the burgers, pressing them down slightly with your hands so they’re not too thick. Cook for about 4 minutes per side, until cooked through to your liking.
  5. While the burgers are grilling, prepare your pineapple. I like to grill mine on medium heat for about 2-3 minutes per side, until light grill marks appear. Set aside to cool.**
  6. Once the burgers and pineapple are done, allow them to rest for a few minutes while you cook the bacon in a medium skillet until crispy, about 5 minutes.
  7. Meanwhile, assemble the burgers! Start with a slice of pineapple, top with lettuce, a burger, slices of onion and tomato, avocado, and then bacon on top. Drizzle with spicy mayo. You could try putting another pineapple slice on top...but it may be pretty hard to eat with your hands!
