Combine all the ingredients for the marinade in a large mixing bowl and mix well (everything except the sesame seeds and herbs) Pour over chicken and toss to combine. If possible, marinate overnight.
Preheat the oven to 400 F. Line a rimmed baking sheet with two layers of aluminum foil and a wire rack on top (to prevent the wings from sticking).
Bake for 35-40 minutes, until the wings are cooked through and crispy.
Serve warm with sesame seeds and chopped chives or cilantro, if desired.
