Gluten Free Baked Feta Pasta

Ingredients
  • 1 8-oz block feta
  • 2-3 cups cherry or grape tomatoes*
  • 3-4 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ½ tsp red pepper flakes
  • Fresh ground black pepper
  • 4 servings dry gluten-free pasta (my favorite is Jovial brand)
  • For serving: fresh chopped oregano (you could also use basil or thyme)
  • Optional, for serving:
  • additional fresh sliced tomatoes
  • Cooked protein of your choice (try chicken, Italian sausage, or chickpeas!)
  • Roasted or raw veggies (broccoli, kale or spinach would all be delicious here!)
Directions
  1. Preheat the oven to 400F.
  2. Combine the feta and cherry tomatoes in an 8x8 oven-safe baking dish. Drizzle with the olive oil, and sprinkle the minced garlic, red pepper flakes, and fresh ground black pepper around the dish so it’s evenly distributed.
  3. Once preheated, pop the dish in the oven and bake for about 30 minutes - until the tomatoes are bursting and the feta is warm and mushy.
  4. While the (future) sauce is in the oven, boil the water for your pasta. Cook according to the package instructions, then drain in a colander and set aside until the tomatoes and feta are ready. (The feta and the pasta should finish around the same time).
  5. Once the timer is up, take the feta dish out of the oven. Use a fork or potato masher to mash up the tomatoes and mix with the feta.
  6. Mix your cooked pasta right into the baking dish. Top with fresh herbs (and optional protein/veggies, if desired), and then spoon into individual serving dishes.
  7. Devour!
Notes
*The amount of tomatoes depends how cheesy you want your pasta! If you want more tomato sauce and a little less cheese, do 3 cups of tomatoes.
You could also use fresh gluten-free pasta if you can find it! 
You could even throw some Italian seasoning in here - but I wanted to keep things as simple as possible.
