Try saying that 5 times fast: Pulled Pork Paleo Pho. Phew!

Picture this: It’s a cold and rainy day outside. (Um, hello. Or you could just look outside if you’re me because it’s raining AGAIN here. Where is the sun?! It’s almost freaking MAY!!) Anyway. Maybe you’re feeling a little bit under the weather (pun intended) or danced a little too hard last night. All you want is soup.

Pulled Pork Pho (Paleo) - Real Food with Dana

Specifically, pho: that delicious, warming, vietnamese noodle soup that you can practically faceplant into because it’s so freaking tasty. But, you’re severely gluten intolerant, gluten-free, or paleo, and aren’t sure what ingredients your favorite pho joint has been putting in their soup. Soy sauce is a big no-no for the gluten challenged (or on paleo), which may leave you feeling, sad and well, soup-less.

Solution: this delicious, vegetable-packed, super flavorful, gluten-free and paleo-friendly version of pho!

Be warned: this soup is a tad bit messy to eat. As in you probably wouldn’t want to eat it on a first date. Or second. Or with anyone who you’re less than comfortable with seeing a whole bunch of zucchini noodles drip down your chin and potentially on to your lap. Unless you find a more socially appropriate way to eat this soup…then please let me know because I’m at a loss.

Good thing it’s insanely tasty and I could really care less what I look like eating it because it’s THAT good. Especially with some sriracha drizzled on top.

Dig in, my friends. Gluten-challenged or not, you’ll love this vegetable and flavor-packed soup that’s even better than takeout.

Heads up: You’ll need some pulled pork for this recipe. My ginger-garlic slow cooked pulled pork is the BEST in this soup. You can also use any other leftover meat, like leftover chicken, steak, or even shrimp!
