Whitney Stuart, also known as Whitness Nutrition, is a Dietitian in Dallas, Texas and one half of the Whole30 Dallas Duo coaching squad. Whitney and I (finally!) first met at the Whole30 Coaches Summit in Park City this summer and instantly connected over our love for nutrition science and passion for helping people work on their relationship with food and their bodies through real, nourishing, whole foods. Even though we’re both Whole30 coaches, we don’t actually talk too much about Whole30 in this episode. Beware: when Dietitians and Nutritionists combine, lots of nerdy science talk comes out. But we’re really getting into the weeds of some health trends and pitfalls people make when trying to undertake any diet and lifestyle change (like how gluten-free isn’t all it’s chalked up to be!) – and spoiler alert: dietitians and nutritionists do not eat the way that they prescribe for their patients all the time. Ex. we do not eat whole30 or the time (nor do we recommend that for anyone)!
