Well, this is pretty last minute. Oops. Not my fault I was in the Dominican Republic tanning burning, lounging by the pool and taking long walks on the beach at sunrise until Sunday. And I’m not waxing poetic here, we actually did all those things. Booze cruise, snorkeling and all.But I’ll stop bragging about that. Let’s get to Christmas!

IMG_5083In my family, we pretty much eat the same things as Thanksgiving for Christmas dinner. Switching up the turkey for a ham, usually Honey Baked. MAN that stuff is good. Leftovers for dayssss. And you know how much I love leftovers. Plus, for Christmas Eve dinner my family has been going to Maggiano’s for about…15 years now? They make a MEAN chicken saltimbocca and can easily accommodate gluten and dairy free requests. I get the same thing every. single. time. It’s that good.

If you’re like me, you’re totally planning this holiday meal last minute. Yay for the procrastinators! But it’ll still be delicious for sure. Here’s some of the dishes I’ll be making for Christmas breakfast and dinner, plus some other ones I WISH I could if I had about 30 mouths to feed and a week (or three) to prepare everything…

Christmas Dinner

Honey Baked Ham with Spiced Apples 

Honey Cornbread Muffins. (Paleo)  Why haven’t you made these yet??

Sweet Carrot souffle. My recipe coming soon! It’s stupid good and I’d eat it year round.

Roasted Brussels Sprouts with Bacon, Pecans and Maple-Balsamic Vinaigrette. Made these for Thanksgiving and they were such a hit everyone asked for them again. #winning.

Apple Pie spiced Applesauce.

Ginger Apple Cranberry Sauce. (try it on the ham – so good!!)

Garlic and Herb Mashed Cauliflower. 

Butternut Apple Bacon Stuffing.

Sautéed Acorn Squash with Cherry-Maple Cranberry Sauce. 

Holiday Brunch

Gooey Sweet Potato Pie Cinnamon Rolls. or Pumpkin Butter Cinnamon Rolls. These are the ones I made last year but I’m dying to try out Britanny Angell’s recipe from Every Last Crumb!

Pumpkin spice waffles with butternut-bacon syrup. I need to make these somehow so I can eat them and not die from a gluten bomb. Will report back.

Bruléed grapefruit with cinnamon and cloves.

Sausage and Butternut Squash Frittata.

Cinnamon Bun Muffins.

Chia Pumpkin Gingerbread Muffins.

Pomegranate, Orange and Mint Salad with Coconut Cream. 

Baked Eggs in Avocado.
