I’m on a buffalo & ranch kick lately mmkayy? It’s fine, I swear. Between my Chimichurri Chicken Wings with Ranch and Buffal0 & Bacon Chicken Skillet with Ranch & Roasted Brussels Sprouts being so freaking popular this month, I’d say you guys are too! No judgement here. Your (and my) newest obsession? This Slow Cooker Buffalo Chicken Dip. Holy moly you guys. Just WOAH.

Can you say Super Bowl parties? YAAAS pleaseandthankyou.

I hope you guys don’t get tired of me talking about football (and football food) because it really is just the freaking best. Even if you don’t like football (weirdos) and get dragged to tailgates or playoffs/Super Bowl watch parties by whomever, you can still enjoy the food and drinks, right?

People ask me all the time why I’m a NY Giants fan even though I grew up in Maryland/right outside of DC (aka PRIME TIME Redskins territory. again, yuck). My parents are from Jersey, and we’ve had season tickets since the first stadium opened (thanks, Grandpa!) so for almost every home game since I was a liiiitle child…well, littler than I am now, anyway…we’d schlep our way about 4 hours up the Jersey Turnpike to go to the games eat great tailgate food and scream our faces off at the usually horrible Giants. Except when they beat the Patriots in the Super Bowl TWICE heeeeeey! So yes, football and football food have a special place in my heart.

This slow cooker buffalo chicken dip THOUGH. I bet, after making this once or twice, you’ll commit the recipe to heart. Because it’s that easy and that freaking delicious! I brought it to our crossfit holiday party this year and it was GONE loooong before the cheese-villed version! P.s. I don’t know if you’ve ever made or looked at a standard recipe for buffalo chicken dip, but holy balls you guys. There are literally like 4 lbs of cheese in that ish! I don’t care if you’re lactose intolerant or not, that sounds like a recipe for stomach huuuurt.

On to the recipe! I love dipping cucumber, carrots, peppers or jicama in here. Or pouring some over a baked sweet potato, to make a buffalo chicken stuffed sweet potato. Uuuuuum YES getinmybelly. Or go for some plantain or sweet potato chips!

p.s. celery is gross and I hate it with every ounce of my being but I know some people like it for dips and I just love you guys THAT MUCH so I included it as an option here. Even though it totally made everything else on my cutting board taste like celery. which is gross. ew.

Directions
  1. Combine all the ingredients in the slow cooker and stir until well combined.
  2. Set the slow cooker for 2-3 hours on LOW.
  3. Serve!
Notes
*Don’t have time to slow cook the dip? Bake it in a dutch oven or casserole dish for 30-35 mins at 350 F, until lightly brown around the edges and bubbling.

  1. YUM! This looks great… but I think if I served this to my friends on Super Bowl Sunday instead of my (tons of dairy, definitely not Paleo) famous buffalo dip they might kill me. I’ll be doing Whole30 still, so I’m thinking of sticking with some grilled drumsticks, buffalo style and a build your own taco bar!

    GO GMEN! I am a Giants fan in Eagles country and everyone is always like WHY? And I’m like my entire extended family from Jersey would disown me haha. That game two weeks ago was rough, but Aaron is on fire. I was SO happy when they beat the Cowboys!

      And YES go GMEN!! I’m a Giants fan in Redskins country, so I get you! Exaaaactly. My parents and rest of my family are from Jersey. Honestly I’m happy whenever anyone beats the Cowboys! So if we had to lose to anyone I’m glad it’s the Packers and not the Cowboys or Patriots, UGH!
