Welcome to your new favorite, super easy, one and done dinner – gluten free Baked Feta Pasta. 

You all know I’m big on flavor, but don’t like to have tons of ingredients (or fancy schmancy ingredients that require you to go to one really expensive grocery store to get). So simple + big flavor is my favorite. And this gluten free baked feta hits all the spots.

I first saw this trend on tiktok (yes, I’m a millennial on tiktok. relax. I don’t post on there, I’m just here to observe and laugh – which I love!) and thought WAIT. Can it really be that easy and delicious?

YEP. 

Here’s the breakdown of how the recipe works:

  • toss a block of feta and cherry or grape tomatoes in an oven-safe dish with olive oil and spices of your choice. (Mine are listed below in the recipe, duh).
  • Bake in the oven until everything is all melty and the tomatoes are burst.
  • While the goodies are baking, make the pasta.
  • When the oven goodies and pasta are done, mix everything together.
  • It’s that simple!

The great thing about this pasta is it’s a great canvas, or a choose-your-own adventure type-dish. 

You can either eat it as is, just with the feta-tomato sauce and pasta, or you can add your favorite protein, stir in some roasted or sautéed veggies, try different types of pasta – heck, even substitute goat cheese for the feta, which would be delicious too! 

First time I made this, I added some Italian chicken sausage and leftover roasted broccoli.

Next time, it was chickpeas.

I bet it’d be great with some shrimp, like an arrabbiata if you threw some red pepper flakes in there…the flavor possibilities are great!

Gluten Free Baked Feta Pasta

Serves: 4 servings
Ingredients
  • 1 8-oz block feta
  • 2-3 cups cherry or grape tomatoes*
  • 3-4 Tbsp olive oil
  • 1 Tbsp minced garlic
  • ½ tsp red pepper flakes
  • Fresh ground black pepper
  • 4 servings dry gluten-free pasta (my favorite is Jovial brand)
  • For serving: fresh chopped oregano (you could also use basil or thyme)
  • Optional, for serving:
  • additional fresh sliced tomatoes
  • Cooked protein of your choice (try chicken, Italian sausage, or chickpeas!)
  • Roasted or raw veggies (broccoli, kale or spinach would all be delicious here!)
Directions
  1. Preheat the oven to 400F.
  2. Combine the feta and cherry tomatoes in an 8x8 oven-safe baking dish. Drizzle with the olive oil, and sprinkle the minced garlic, red pepper flakes, and fresh ground black pepper around the dish so it’s evenly distributed.
  3. Once preheated, pop the dish in the oven and bake for about 30 minutes - until the tomatoes are bursting and the feta is warm and mushy.
  4. While the (future) sauce is in the oven, boil the water for your pasta. Cook according to the package instructions, then drain in a colander and set aside until the tomatoes and feta are ready. (The feta and the pasta should finish around the same time).
  5. Once the timer is up, take the feta dish out of the oven. Use a fork or potato masher to mash up the tomatoes and mix with the feta.
  6. Mix your cooked pasta right into the baking dish. Top with fresh herbs (and optional protein/veggies, if desired), and then spoon into individual serving dishes.
  7. Devour!
Notes
*The amount of tomatoes depends how cheesy you want your pasta! If you want more tomato sauce and a little less cheese, do 3 cups of tomatoes.
You could also use fresh gluten-free pasta if you can find it! 
You could even throw some Italian seasoning in here - but I wanted to keep things as simple as possible.

  1. I will try it with zucchini noodles to make it low carb, and add either chicken or Italian sausage. Looks delicious
